INGREDIENTS
- 1 lb (500 g) skinless, boneless chicken thigh slices (or chicken breasts)
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1 cup(60g) tri-color quinoa
- 50g green beans
- 4 small tomatoes
- 1 cherry radish
- 50g bitter chicory
- 50g kale
- One Japanese pumpkin
- 2 teaspoons minced garlic
- 1 tablespoon flour
- Cracked pepper, to taste
STEPS
Step 1: Wash and drain green beans, baby tomatoes, cherry radish, chicory, kale, and Japanese pumpkin;
